“When we tasted all the wines in Ayala’s vast cellars, we realized that they were of such outstanding quality that they could stand a lower [sugar] dosage,” says Hervé Augustin, top executive put in charge of Ayala by Bollinger. While the majority of champagne receives the addition of sugar to correct any taste imperfections and round out acidity, Ayala is so confident in the quality of its fruit and in American consumers’ desire for dry champagne that it can use its base wine for Brut Zero Dosage and Cuvée Rosé Nature without adding any sugar.

Ayala introduced Cuvée Rosé Nature in May of 2007, in addition to its Rosé Majeur, to satisfy a worldwide demand for pink and dry champagne. It is something you can drink all year round as part of a celebration and it pairs wonderfully with canapés as well as a meal.
